How to book guide and river ?

Hello
I will go to Scotland, from 17 to 24 September, or from September 24th to October 1st.
I look for a guide for two days (trouts and/or salmon) and I also look for a river to trouts/grawling for two or three days.
An advice for me ? How book river Don ?
Is there a list of guides ?
