If smoking is bad for you, how come it cures Salmon?

It doesn't cure salmon...... you need to make up a cure to 'cure' the fish before you smoke it :z7

salt is part of the cure, a friend of mine with a smoking business, used demerera sugar and navy rum, every one has their own recipe, easgach1

yip EASGACH 1,we all have our own cures.i wont give away my cure,as it has been in the family for many years,but i have heard of of people using lemon/orange zest with salt curing for 24hrs before smoking.to be honest,it more or less takes the salmon taste away,with overpowering taste of orange/lemon.okay for the oven for a hour or 2.but not in a smoker
